  • 使用国産鰻,且為了不使肉中的脂肪乳化,鰻魚不用蒸的,而是在約 300 度的備長炭的炭火上烤,再以超過 20 年的陳釀醬汁調味。Only domestically produced eels are grilled over Binchotan charcoal. In order not to emulsify the fat in the meat, the eel is not steamed but grilled over charcoal at approximately 300 degrees and seasoned with the sauce aged for more than 20 years.
