傳統江戶前壽司 Traditional Edomae Sushi

  • 1. ひよっこ Hiyoko – 去除雞蛋的蛋黃,用蛋黃和脆蝦的混合物重新填滿 The yolk of the boiled egg is removed and refilled with a mixture of egg yolk and crumbly shrimp.
  • 2. 手綱巻 Tanemaki – 旗魚小鰭的酸味和脆皮蝦的甜味交替排列在壽司米上 Open the double-sided kohada and prawns, and arrange them alternately on top of the sushi rice. The balance between the sweetness of the crumbly prawns and the sourness of the kohada is wonderful
  • 3. いかの印籠詰め Ika no Inro-zume – 烏賊腹部中塞入壽司米與鹹甜的干甘草、醃薑和海藻 The sushi rice mixed with salty-sweet simmered kanpyo, pickled ginger, and kneaded seaweed is stuffed into the squid’s belly
  • 4. 才卷海老 Saiko Shrimp – 小明蝦對切後捏成環形壽司 Sushi shaped in a ring shape after cutting small shrimp
  • 5. おぼろ Oboro – 蝦泥和蛋黃泥做成看起來像山茶花的美麗裝飾壽司 The shrimp and egg yolk are made to create a beautiful decorative sushi that looks like a camellia flower.
