- 從中世紀鎌倉時代流傳下來的備前福岡的鄉土菜餚，將醋與米飯混合後煮成的壽司，據說是備前壽司的起源。Dodomese is a local dish of Bizen Fukuoka that has been handed down since the Kamakura period in the Middle Ages. It is simmered sushi made by mixing vinegar with cooked rice, and is said to be the origin of Bizen barazushi.
